It was somewhat of a trying day, but it was survivable. I ended up swimming for my exercise today, which really hit the spot.

I've spent the last two hours working on lesson plans in the back while listening to Josh laugh hysterically at people's reactions to "One girl, one cup". Quite entertaining. If you haven't seen it, you're one of the lucky ones. It's worse the GOATSE.

Mom is coming to visit for a few days starting tomorrow. *SQUEAL* I'm so excited. We always have such a great time. She's going to go with me to the gym a couple times.

Breakfast:
1/2 cinnamon roll with strawberry cream cheese
Bucket of coffee
Lunch:
Turkey sandwich (100 calorie flat bread, 2% cheese)
Sugar free pudding

Snack:
Beefy Cheesy Casserole (See, this is why I DON'T MAKE CASSEROLES)
Dinner:
Grilled pork chop kabobs
Asparagus
Boiled new potatoes (Spray butter)
Dessert:
1/2 apple

I survived the first day of teaching summer school. I'm hoping subsequent days are as easy as today was, as far as behavior was concerned.....but I'm not getting my hopes up too high.

I decided I was tired of making the same things. So..................I decided to visit our family recipe page at www.ourrecipearchive.wikispaces.com and look at some different things. I chose mom's recipe "Beef Cheese Noodle Casserole". I've been terrified of making casseroles because they're so calorie ridden, but I took it and made some adjustments. I used less Velveeta, less fat free cream cheese and less low fat sour cream. I also used whole wheat pasta, which is unable to discern from regular pasta in my opinion.

Breakfast:
1/2 cinnamon raisin bagel with strawberry cream cheese
Bucket of coffee
Thermos of coffee
Another thermos of coffee


Lunch:
Crescent roll sandwich with grilled chicken and cheese (It was provided by the SPED director for our lunch meeting. I forgot to take a picture.)

Snack:
1/2 apple


Dinner:
Asparagus
Beef Cheese Noodle Casserole
Dessert:
Honestly, I had another helping of the casserole, hence another reason why I don't make casseroles. They taste too darn good. So nothing sweet for me tonight.

Exercise:
Walking 10 minutes
Running 20 minutes
Elliptical 10 minutes (really fast this time)

I spent most of the weekend planning for summer school, but the highlight of the weekend was mine and Josh's 12th wedding anniversary today. We had a quiet and lazy Sunday and enjoyed being together as usual. I can't WAIT to spend the next twelve having just as much fun as we did the first twelve.

Breakfast:
1/2 cinnamon raisin bagel with strawberry cream cheese
bucket of coffee


Lunch:
Tuna salad and crackers (reduced fat mayo, one boiled eggs)
7 saltine crackers


Snack:
IKEA chocolate squares

Dinner:
Steak shish kabob
Asparagus

Dessert:
Sugar free Jell-O with Cool Whip

Ham and cheese omelet
Biscuit
Spray butter
Strawberry jelly

Exercise:
Walking: 15 minutes
Running: 20 minutes
Elliptical: 10 minutes
Stationary Bike: 10 minutes
Weight machines: 10 minutes

I enjoyed being at the gym yesterday. I just sort of took my time in between different things. I want to say there were a ton of junior high basketball kids up there for camp, and they were so well behaved. I was really impressed.

I was at the middle school for about four hours getting my room ready, gathering up textbooks and basically just standing around. I'm looking forward to the challenge of the upcoming weeks. Keep your fingers crossed for me.

Breakfast:
1/2 cinnamon roll bagel
Lunch:
Fat free hot dog
1/2 apple
Cucumber slices
Snack:
1/2 apple
4 cheese and peanut butter crackers
Dinner:
Hamburger (reduced fat mayo, mustard, ketchup, cheese on a bun)
Salad (Spray ranch, cheddar cheese, Fiber One, Whales, salt, pepper, Equal [yes, I said Equal])
Dessert:
Sugar free pudding

Exercise:
30 minutes running
10 minutes walking
10 minutes on Elliptical
30 minutes racquetball
20 minutes doing the weight machines

My teaching summer school adventure starts tomorrow with registration and a teacher meeting. I'm lucky that I'll get out at 12:00 and can still get to the gym to spend my "me" time. I REALLLLLLLLY want to lose some weight or inches before our cruise at the end of June. I don't want to do anything outrageous to melt it off, but since I started a few months ago and haven't made any progress I might have to do something. I wonder if an all marshmallow diet would work? I kid, I kid.

I got to partake in something that's been missing from my life for a few years now. They took these off the shelves, and I've mourned them like a fat kid mourns dropping the last piece of cake in an ant bed. Morning Star Vegetarian Corn Dogs...........cue heavenly light and orchestra playing "Hallelujah". They taste great, are low fat/low cal and who cares how they make the "dog" part of the corn dog taste like real meat, right? Right? RIGHT? Well, maybe that's a tad scary but still worth eating.

There is only one thing I j'adore more than zucchini and that's Italian food. I had fun making some lasagna rolls tonight. We had some chicken with it. The key to juicy and tender pan seared chicken is a low temperature. I know, I know, it takes longer, but it's so worth it.

Morning Star vegetarian corn dog with ketchup and mustard
Leftover whole wheat rotini with zucchini, tomato and Parmesan cheese

Pan seared chicken breast (garlic powder, onion powder, parsley)
Lasagna roll (roasted tomatoes and zucchini, tomato sauce, oregano, ricotta, lasagna noodle, onion powder, garlic powder)
Dessert:
1/2 apple
Orange Jello and Cool Whip


Exercise:
30 minutes running
10 minutes walking
10 minutes on Elliptical
30 minutes racquetball
20 minutes doing the weight machines

Josh and I went out of town for nearly a week. I decided I'd rather not deal with the blog during that time. The good news is we did lots of walking, and for the most part, I was able to eat pretty well. I had my bad food choices moments, but I made sure I enjoyed them knowing I'd be getting back to the grind when we got home.

Amazing news: I purchased a wok from IKEA.Fantasticalatious news: I'm LOVING being back at the Sanderson Center (MSU's gym)

Breakfast:
1/2 cinnamon raisin bagel with strawberry cream cheese

Wokkified zucchini
Fat free hot dog on a wheat bun with reduced fat mayo
Snack:
1/2 Fuji apple
Dinner:
Barbecue pork chop
Whole wheat pasta, tomatoes, zucchini, garlic
Corn on the cob with spray butter
Dessert:
Orange jello with Cool Whip
Exercise:
20 minutes running
10 minutes walking
10 minutes elliptical
20 minutes racquetball
