My fabulous mom is here with me for a couple of days. The minute she pulls into the driveway, I can't stop smiling. We have so much fun together.




Breakfast:
1/2 cinnamon raisin bagel with strawberry cream cheese
Bucket of coffee
Lunch:
1/2 Little Dooey barbecue sandwich
A couple of Josh's waffle fries
A few of mom's eggplant fries
Snack:
Zucchini pizza on Nature's Own 100 calorie flat bread
Dinner:
Grilled chicken salad
Roasted zucchini and yellow squash
Dessert:
Sugar free orange Jell-O with Cool Whip

Subway black forest ham sandwich on honey oat
2 or 3 Baked Lays
Snack:
1/2 Fuji apple
Dinner:
Ham, cheese and zucchini omelet
2 pieces of Nature's Own 35 calorie bread
1 Tbsp. strawberry jelly
Dessert:
Caramel apple won-ton

Josh won us baseball tickets to the MSU game against LSU. Turns out they were hyped up and ready to break a record, except it was the wrong kind. LSU almost won so big over us that they came close to beating their "biggest score over another team" in years. It was still so much fun though. Baseball games are more relaxed and we were able to just have a good time. Thanks to our local coffee place, Strange Brew, for the free tickets.

Breakfast:
1/2 cinnamon raisin bagel with strawberry cream cheese
Bucket of coffee
Lunch:
Fat free hot dog on wheat bun (reduced fat mayo, ketchup, mustard)
Cucumber slices
1/2 Fugi apple sprinkled with salt
Snack:
Granola bar
Dinner:
Corn dog
1/2 small order of tater tots
(I was nauseous from riding in the passenger seat with Josh.)

Dessert:
Granola bar

I decided to make something different for my dessert tonight. I'm still on the fence about won-tons that aren't fried. They have a raw pasta flavor that I can't quite get around. Excuse the first two won-tons I made, since they are a tad challenged.



Breakfast:
1/2 cinnamon raisin bagel with strawberry cream cheese


Lunch:
Tuna salad (Reduced fat mayo, 1/2 egg, salt pepper)
Saltines


Snack:
Cool Whip and sugar free orange Jell-O


Dinner:
Pot roast
Broccoli mush with a tad of Velveeta
Roasted asparagus


Dessert:
Caramel Apple Won-tons
Cool Whip

I was able to actually pass people on the running track today. I passed some of them two or three times. I'm getting more and more excited about my university gym membership that starts May 23 though. I'll get to swim, play racquetball, run, do the elliptical machine AND lift weights. Maybe I'll actually start to see some weight come off then.

Supper was a strange combination, but filling nonetheless.

Breakfast:
1/2 cinnamon raisin bagel with strawberry cream cheese
Bucket of coffee
Lunch:
Tuna salad (tuna, salt, pepper, reduced fat mayo, 1/2 boiled egg)
7 saltines
Snack:
Carrots and French onion dip
Dinner:
Hot dog (wheat bun, reduced fat mayo, fat free hot dog, mustard, ketchup)
1 deviled egg (reduced fat mayo and mustard)
Broccoli, Velveeta and spray butter on a small red potato
Salad (cucumber, lettuce, spray ranch dressing, sharp cheddar, parmesan cheese, Fiber One, 7 Whales)
Dessert:
Orange Jell-O
Cool Whip

Well, after seeing Josh's bottle of hummingbird feed sit on the counter for over 24 hours with Josh's reasoning being to "let it get to room temperature", I went ahead and filled up the bird feeders for him.

Also, the kitchen fairy came once again while Josh was at work. Thank goodness for that little fairy, cause the kitchen was annihilated last night during supper.

And for those who are as tired of seeing me eat chicken burritos as I am of actually eating them, you'll be happy to know I ate the last one today. I will NEVER make that many at one time again.

On an added note, all these veggies I've been eating have my stomach in an uproar. I've added Gas-X to my daily regiment of vitamins and meds.

Chicken burrito
Mexican Zucchini (onion, tomato, corn, zucchini, yellow squash)

Hamburger patty (leftover from last night's dinner)

Broccoli mush (My dad's recipe: Boiled broccoli, salt, 1 Tbsp. Reduced fat mayo)

Josh and I went on a Sunday "Coupon and Deal Scavenger Hunt" routine through town today, which can leave a person both famished and empowered. Our trip always starts out at Wendy's for lunch so we can steal the coupons from the Starkville Daily News. Okay steal is a strong word. Let's say we lovingly confiscate them. Hey, don't judge us. We also eat ~dessert~ from the free sample area at Kroger, which happens to have been empty for the last two weeks. :~/ Times are tough people.

We were able to buy a few staple items for reduced prices, but the problem is we always end up stuffing a few impulse buys into our cart. So was the hunt a success? I suppose so. We need to work on it.

P.S. I think I need more fruit in my life. No jokes from the peanut gallery please.

P.S.S. WHY AM I NOT LOSING WEIGHT!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!poot!!!!

Wedge of Laughing Cow Light Swiss Cheese
6 Whole Wheat Ritz
Dinner:
Cheeseburger (Angus beef bought on sale for $3.88 for 1.75 pounds, which is a steal. I marinate them in onion powder, garlic powder Dale's and Worcestershire. All that sodium is why I eat so much asparagus, which is a natural diuretic.)
Italian spiced zucchini (Italian seasoning, canola oil spray, onion powder)
Roasted Asparagus (Spray Butter and salt)
Dessert:
Sugar free lemon cake with Cool Whip

Yesterday was what I call a "lazy day". We sat around the house most of the day, then did a super secret trip to ________________. Don't you wish you knew where we went?

Friday the THIRTHEENTH!

Pinterest is one of my new favorite obsessions. You can peruse other people's "favorites" of all types and pin them on your own specially named boards. Today I decided to try a new recipe for supper that I found on there. Try this site out. You'll be addicted.

Breakfast:
1/2 cinnamon raisin bagel
Bucket of coffee
Lunch:
Jr. Deluxe Burger from Sonic with only ketchup (When I got home, I added a small amount of reduced fat mayo)
Tater Tots
Snack:
I ate a late lunch, so I skipped the snack.

Dinner:
Won-ton Mini Lasagnas (My version is a variation of the linked recipe with zucchini, sausage, pepperoni, sauce, cheese)
First I roasted some zucchini.
Then I layered my cute little lasagnas.
In the oven.
Done.
These were delicious, but I'd do a couple of things differently the next time.
  • I'd use more zucchini
  • Less sauce
  • Add ricotta cheese to the layers
  • Fold the tops of the won-tons over so they don't get crispy. Josh and I both agreed the crispy won-ton tasted like raw spaghetti noodles.
Dessert:
Sugar free slice of lemon cake with Cool Whip
